    Have you checked out Orion https://browser.kagi.com/ I go back and forth on this browser. It is webkit based but support for both chrome and firefox addons. I use chrome like you do with multiple profiles, but am starting to just use safari for some things and chrome for somethings to keep it clean. Orion has some promise though.

    I use safari on mac and I love it. However, Safari on iPhone is still just not up to spec. Whenever I open safari, I want it to open a new tab on either google.com or the homepage, but instead it just opens up the last used page. I could use a shortcut, but that has the banner on the top of the screen when I click it. This one thing just stops me from using it because it is so important (I use it to give me news on the google app homepage).

    Firefox is my main browser as well (I try to use Safari on and off but have to jump out from time to time because something is broken -- this time it's Bitwarden's keyboard shortcut), however speaking of uBlock Origin, there's a viable Safari alternative (of course not free, because it's the Apple world ;) ), namely 1Blocker. It works on both macOS and iOS and is pretty neat. It works differently than uBlock because it taps into Safari's built-in tracking protection and just feeds it additional rules so it's faster than a 3rd party extension. Give it a try if you like.
