On the theme of saving stuff from the internet for later, there's also, like, bookmarks. Your browser already has a bookmarking feature I'm sure, and it probably has organisation and tagging for them too (at least, Firefox does). If you get really into bookmarks there are paid services like Pinboard and Are.na (technically paid-ish) - haven't tried them myself, but I hear they're good.

A second brain, for you, forever. Obsidian is a powerful knowledge base that works on top of a local folder of plain text Markdown files.
Could also just take notes as a form of collection! Obsidian seems cool (though I haven't used it yet either), and Notational Velocity is mac-only but pretty fun. Anything interesting or useful that you might want to remember can be a note, and then it's fun to look over all the stuff you put down... If you really want to get meta, remembering stuff is a kind of collecting too, so you might like spaced repetition with Anki. I wish you good luck on finding something worthwhile :).
