When you deselect the documents folder, it just stopped synching it back to the cloud, but keeps the files on your device (at least the ones that were downloaded if you were using on-demand). If I'm not mistaken, there will still be an online backup (up until you stopped synching it) in the OneDrive cloud https://onedrive.live.com.
