If you really want 100 players in the same world then you'll need a high clocking cpu along with some ram. For performance sake I would use paper (papermc.io) as serversoftware. If you want plugins too however it will get complicated because they can require a lot of ram and cpu on the top.

Simply put, Spigot is it.
If you want to host a server on your own, use spigotmc.org and get the spigot server jar. Or get something like tuinity. (Purpur is a fork of tuinity, but just adds features like more ridable mobs in the config.).
