I've used both Postman and Insomnia, but recently I've been using the REST Client plugin (https://marketplace.visualstudio.com/items?itemName=humao.rest-client). It's not a feature-rich, but I honestly like the workflow of not having to switch apps and work with files in my editor (as well as put variables in a .env).

For me it's because people already know and are already using Postman. We already author collections for services that other devs in the company reference when using our APIs. Sure we could write the tests in python or whatever, but everyone is already using and likes Postman for the most part. And replacing the postman collections that people use for reference with a folder of scripts I don't see going over well. I'd personally prefer something like https://hurl.dev where you have a readable file in source control, but that's not a battle I'd win at this point.

I've been using https://insomnia.rest/ and I am a massive fan. From the ability to make dependent API calls to say log in with one API call, and inject login tokens into the other from the first's response is amazing! Overall this tool has been my go-to for 3 years now.
