  I'd look into Action Network (https://actionnetwork.org/) to do your actual mailing list stuff. It's much much cheaper than Marketing Cloud and can sync data to and from your Salesforce instance. My advice would be to build as broad a coalition as possible so it's not a niche "vegan special interest" thing. Can you persuade folks from the public health community to offer support?
